Deep frying is a cooking method in which food is dipped into boiling vegetable oil at a temperature of 130-180 ° C and quickly fried for several minutes.
How to work with deep fat
The key ingredient in deep- frying is oil. Some opponents of this method of frying are sure that it is very expensive, since you need to buy a liter of oil each time and throw it away after cooking. However, it is not. Even the instructions for deep fryers indicate that the oil can be used up to 10-15 times.
After each cooking, it must be cooled and filtered. To do this, you can either use special filters from the fryer kit, or filter the oil through a non-woven material – for example, coffee filters. Do not use toilet paper or napkins for filtering – they will soak in the oil and the particles will remain floating in it. Oils after products with a particularly strong smell like fish will not lose their aroma from filtration, so it is worth using them further with the same type of products. Store filtered oil in the refrigerator.
The more often an oil is used, the lower its smoke point becomes. Over time, it will begin to smoke even with ordinary, lower temperature frying and will have to be disposed of – even clean and odorless, it is no longer good for anything.
Refined and deodorized vegetable oils are suitable for deep frying, as well as special deep frying oils with a high smoke point above 180.
In addition to sunflower, you can fry in coconut, olive, rapeseed, cottonseed, corn, grape oils.
You can add some animal fat with a high boiling point – for example, lard, lard, ghee, but not butter.
The fryer itself is very easy to work with. First, oil is poured, the temperature and cooking mode are selected, if any are provided by the device. Indicators on the panel will notify you when the oil is heated, after which you can put food and close the lid. However, in the operation of this device, more than anywhere else, it is important to follow safety rules. Firstly, do not allow excess water to enter the oil, otherwise hissing sparks are guaranteed. Therefore, wipe the fryer dry before use.
Oil seething always occurs due to the rapid evaporation of moisture in the products. Therefore, put food into the oil using tongs or a complete basket to avoid splashing on the skin.
Always close the lid tightly while frying. Before laying a new batch of products, be sure to get rid of small pieces and crumbs that got into the oil through the mesh, otherwise they will start to burn, smoke and give a burnt aftertaste to the new batch.

Spring rolls are Asian rice paper based pancakes. Therefore, the main and main ingredient is rice paper. And the filling can be any: fresh or stewed vegetables, meat, chicken, salted fish, and so on. It is important that the filling for the spring rolls is pre-cooked, so if you plan to use minced meat or chicken, fry them before cooking the pancakes.
